Freekeh Stuffed Chicken

Ingredients:-
-Butter.
-1 Chicken, washed well.
-2 Ttablespoons of Apricot Jam.
-1 Spoonful of Lemon Juice.
-1 Cup of Orange Juice.
-1/2 Cup of Freekeh, washed well and soaked for an hour in lukewarm water.
-Dried Plum.
-2 Tablespoons of crushed Garlic and Ginger.
-Big chop Onion.
-1 Spoonful of Honey.
-2 Tablespoons of Pomegranate Molasses.
-Lemon and Orange Peel.
-Cumin
-Turmeric
-Black Pepper.
-Salt.
-Almonds.
-Chopped onion.

How to prepare:-
-Put the butter to a pot on the stove.
-Add apricot jam, orange juice, lemon juice and saffron.
-Stir until the ingredients melt together.
-Season the chicken with a mixture of spices (cumin, turmeric and black pepper) inside and out.
-Return to our bowl, after the ingredients have melted together.
-Add two tablespoons of pomegranate molasses, one tablespoon of honey, half a spoonful of orange peel and half a spoonful of lemon peel.
-Remove the pot from the fire when it starts to boil so as not to lose its delicious flavor.
-In another pot on the stove, add two tablespoons of oil.
-Add chopped onions, and stir until wilted.
-Add the crushed almonds, crushed garlic and ginger, and stir until fragrant.
-Add the dried plum and freekeh, and stir well.
-Add salt and black pepper.
-Add a tablespoon of the jam and orange sauce that we made earlier.
-Stuff the chicken with the freekeh mixture.
-Prepare a hot tagine (we put it in advance in the oven so that it heats up first), then put an amount of oil in it.
-Put pieces of onions in the tagine, chicken, orange sauce and jam, and the rest of the filling if some of it remains.
-Add half a cup of chicken broth to the casserole.
-Put the casserole in the oven until the chicken is cooked.
-Take the casserole out of the oven and serve it hot.
