Meat Sultah


Ingredients:-
-2 Tablespoons Fenugreek.
-A Quarter cup of Water.
-A Kilo of Lamb, cut into medium-sized cubes.
-3 Potatoes, peeled and diced.
-Green Coriander cup.
-8 Garlic Cloves (4 with Coriander + 4 with Meat).
-Small Carrot Leek.
-3 Green Hot Peppers, finely chopped.
-Finely chopped Hot Red Pepper.
-Salt, to taste.
-2 Tablespoons of Ghee.
-2 Tomatoes cut into cubes.
-2 Onions, chopped medium.
-A teaspoon of Seven Spices.
-2 Cups of Water for Meat.
-A cup of Water (for Tomatoes when cooking them).
-3 Tablespoons of Oil.
-2 Onions, sliced.
-A Teaspoon of cumin

How to prepare:-
-Soak the fenugreek in a quarter cup of water and leave it in a bowl for 3 hours.
-In an electric blender, chop the green coriander, one grain of hot green and red pepper, garlic, leeks, cumin and a quarter cup of water until the mixture is homogeneous and completely mashed.
-Put the oil in a large pressure cooker over a medium heat, and when it becomes hot, sauté the finely chopped onions and garlic until the onions soften.
-Add the meat to the onions and fry for several minutes from several sides until the color of the meat darkens.
-Add the potatoes, and season with salt and spices.
-Add hot water and close the pressure cooker well, and when the whistle begins to boil, lower the temperature and leave it on low heat for an hour.
-Meanwhile, in a pot over medium heat, put the ghee and when it gets a little hot, sauté the chopped onions, the remaining 2 green hot peppers and the garlic for ten minutes.
-Add the tomatoes and stir for a few minutes.
-Add water, season with salt, stir and leave on low heat for a quarter of an hour.
-Filter the fenugreek from the water and stir the fenugreek with a wooden spoon until it mashes.
-Add the celery and coriander mixture to the ring and stir well.
-Take out the meat after it is leveled and fragmented, only half the quantity, and leave the rest.
-Add the meat to the potato bowl after filtering it.
-Add the tomato mixture to the meat and potatoes.
-Add a little meat broth to them and put it on the fire to boil.
-Add the fenugreek mixture to it and leave to boil as well.
-Remove from the stove and serve with Yemeni bread and the remaining meat.
