Rice with Spices
 

Ingredients:-
- Two cups of rice.
- Two medium tomatoes, cut into medium cubes.
- A large chopped onion.
- A stick of cinnamon.
- Five grains of cloves.
- Four grains of cardamom.
- One teaspoon of cumin, not ground.
- Three medium cloves of minced garlic.
- Four tablespoons of olive oil or ghee.
- A cup of frozen vegetables (carrots, peas, corn).
- Two and a half cups of water.
- Salt, to taste.

How to prepare:-
-Wash the rice and soak it in water.
-Heat the oil in a saucepan over medium heat, then add the onions and sauté until golden.
-Grind cinnamon, cardamom, cloves and cumin in a spice grinder and add them to the onions.
Add garlic and stir for a minute until the aroma of spices smells.
-Add the tomatoes and stir until the sauce thickens.
-Add frozen vegetables and stir until slightly soft.
-Add water and leave it to boil, then filter the rice and add it to the mixture.
-Cover the pot with a piece of tin, and leave it for a quarter of an hour until it is completely cooked, and it absorbs the water.
-Stir the rice and pour it into the serving dish and serve it directly.
