Red Beans


Ingredients:-
- 1 can (420 g) red kidney beans.
- 1 ¼ cup (310 ml) boiling water.
- A medium-sized onion, finely chopped.
- A large crushed garlic clove.
- A large tomato cut into small cubes.
- Green hot pepper cut into small cubes.
- 4 tablespoons (60 ml) of olive oil.
- 1 tablespoon (12.5 g) of tomato sauce.
- 1 teaspoon (5 g) of cumin.
- Salt.
- Black pepper.
- Fresh coriander leaves.

How to prepare:-
- Heat the oil in a large frying pan over medium heat, then add the onions and sauté for three to four minutes, until softened.
- Add the hot pepper and garlic, and stir for a minute.
- Add the tomatoes, and stir for two minutes, then add the sauce, salt, cumin, and black pepper, and stir well.
- Add the beans, stir for two minutes, then add the water and bring to a boil.
- Cover the pan, and let it simmer for five to eight minutes.
- Remove the beans from the heat, garnish with coriander leaves, and serve hot with bread.
