Moussaka with Minced Meat

Ingredients:-
- 1 Kilo of black eggplant.
- 1/2 Kilo green bell pepper.
- 1/2 Kilo of minced meat.
- 1/4 Kilo of tomatoes.
- 2 Finely chopped onions.
- 2 Tablespoons of ghee.
- Salt.
- Black pepper.
- Hot sauce as desired.
- Oil for frying the eggplant.

How to prepare:-
- Peel the eggplant circles and put them in water and salt so that they do not change color, then cut the green pepper into slices lengthwise, and cut the tomatoes into small cubes and put them aside.

* Preparing the sauce:-
- Take half the amount of onion and fry it on the fire with a spoonful of ghee until it wilts. Add 1/4 the amount of green pepper and stir it with the onion until its color changes slightly. Add the tomato cubes and stir them with the onion and green pepper, then add a little water, salt and pepper.
- Let the sauce leave you and then set it aside. Then prepare the minced meat.

* Preparing the minced meat:-
- Put the butter or oil with the onions for a few seconds, then add the meat and my heart.
- When it changes color slightly, put all the spices and black pepper, reduce the heat under the pot, and leave it until it is fully cooked, but do not forget to turn it several times.
- Add salt and stir one last time. Add other additions to it, if desired, such as parsley, green coriander, peas, or others, as you prefer.
- After the meat is fully cooked, leave it aside.

* Preparing the eggplant:-
- Drain the eggplant well from the water and salt.
- Fry the eggplant in hot oil and stir-fry until it takes on a golden color. Transfer it to a strainer until you get rid of excess oil or kitchen paper.
- Then fry the green pepper, keeping in mind that it does not burn, just that it withers, and transfer it to the kitchen paper napkins.
 - Bring a Pyrex mold, stack a layer of eggplant, then stack a layer of pepper on top of it, then a layer of minced meat, and another layer of eggplant and pepper.
- Finally, add the sauce on top, then put the mold in the oven until it takes a wonderful golden color.
- Serve hot with green salad and potatoes.
